Chocolate Noatmeal (Low-Carb Oatmeal Alternative)

Ingredients:

  • 1 medium head of cauliflower (or 2 ½ cups of cauliflower rice)

  • 1 Tbsp. Brain Octane Oil

  • 1 cup full-fat canned coconut milk (BPA-free)

  • 4 whole eggs, beaten

  • 1 ½ Tbsp. cacao powder

  • ¼ tsp. salt

  • 1-3 tsp. stevia, raw honey, or sweetener of choice to taste

  • Seasonal berries, mini dark chocolate chips, or unsweetened coconut for garnish (optional)

Directions:

  • If using whole cauliflower, chop into florets and blend in a blender or food processor until it creates a rice-like consistency.

  • In a wide saucepan on medium heat, add the coconut milk and bring to a gentle simmer.

  • Add cauliflower rice and stir until combined. Reduce heat to low and allow cauliflower to thicken for 4 minutes.

  • Fold beaten eggs into the pan with the choice of cacao powder, salt, and sweetener.

  • Stir gently once, allow the eggs to cook through, and thicken the mixture. Stir once more before serving in bowls.

  • Top with seasonal berries, mini dark chocolate chips, and unsweetened coconut, if desired.
